Bokor is a start-up specialising in Kampot pepper. Grown in Southern Cambodia, it is considered to be the finest pepper in the world, and Bokor decided to reintroduce it into France. This amazing product with a rich past almost disappeared under the rule of the Khmer Rouge.
It could often be seen in French restaurants up until the 1970s when it became threatened with extinction by the terrifying Khmer Rouge regime (1975-1979) which transformed the plantations into rice fields. Kampot pepper is gradually making a comeback thanks to the perseverance of a handful of former growers.
Bokor pepper is farmed in small family-run plantations in the Kampot region and there is no industrial process involved. It is hand-picked, sun-dried and then meticulously sorted to keep only the finest peppercorns of which there are black, white and red varieties.
