At Tomy & Co, the chef’s cooking is taken to a new level. Remaining as true to the products as possible, the dishes are generous in flavour and refined in their presentation.

The menu changes monthly to stay in tune with the seasons. A supporter of organic farming and the traceability from harvesting to eating, Tomy founded his own organic garden at Château de Courances, thanks to Tomato & Co – an organisation that values the land and what it produces.

The vegetarian starter changes every month and is made exclusively from the chef’s cooked and raw vegetables, and its taste is a testament to Tomy’s approach, that of rediscovering the true flavour of vegetables. Other producers are rigorously selected by the chef: the fish comes from Thierry Metayer in Brittany, the bread from Jean-Luc Poujauran and meat from the Lalauze butcher’s.

The chef is recreating bistronomy using his produce while pushing the visual presentation towards that of a Michelin-starred restaurant. Tomy has set himself the challenge of surprising the customer and taking them on an unexpected journey.

Reworked dishes have become the signatures and the menu features ox tongue tartlet, marinated turnip and yellow mustard seeds; gnocchi with seasonal mushrooms, chicken jus and parmesan; Ossau Iraty cheesecake and black cherry jam with Espelette pepper.
